Cowboy Stew

I whipped up this delightful dish back in the early 1970s when my pantry was nearly bare. This hearty one-skillet meal is a fantastic mix of barbecue sauce, ground beef, hot dogs, and beans, making it a hit with both kids and adults alike.

Add some spice to the stew by incorporating a zesty sausage such as chorizo or andouille. You might also toss in some pickled jalapeños or chipotle peppers for an extra kick. If you’re looking to pack in more veggies, consider adding frozen or canned corn or green beans. This stew keeps well in an airtight container in the refrigerator for up to three days or can be frozen in resealable bags or containers for a tasty meal up to three months later. When reheating on the stovetop, do so over low heat, adding broth or water if needed. And of course, don’t forget the cornbread! Pair it with some honey cornbread for a perfect complement, along with a side of crunchy coleslaw or some fresh green veggies.

Ingredients:

  • 2 pounds ground beef
  • 4 cans (16 ounces each) baked beans
  • 8 hot dogs, sliced
  • 1/2 cup barbecue sauce
  • 1/2 cup grated Parmesan cheese

Directions:

  1. In a Dutch oven, brown the ground beef over medium heat until it is no longer pink; be sure to drain any excess fat. Next, mix in the remaining ingredients. Bring the mixture to a boil, then reduce the heat, cover, and let it simmer for 4-6 minutes until the flavors meld beautifully.
